Easter baking, fun for all the family

Easter fun for all the family doesn’t need to cost a fortune, why not get your aprons on and bake with the children. Try my quick and simple cupcake recipe with Easter theme topping:

Recipe


150g soft butter or margarine
150g castor sugar
150g self-raising flour for chocolate ones add 10g of coco powder
3 whole free range eggs
½ cap vanilla essence

Butter Cream Topping

200g unsalted butter
200g icing sugar
½ cap vanilla essence or your choice of flavour

Method

Pre heat oven to 175 degrees
Cream butter and sugar and vanilla in a bowl till fluffy
Gradually add the eggs till smooth
Fold in the flour
Spoon into cupcake cases (makes 12)
Place in oven for 12-14 minutes
Remove from oven and leave too cool (ideally use a cooling rack)

The topping

Make sure the butter is really soft, if not give it a few seconds in microwave.
Mix the 200g of soft butter, vanilla and sifted icing sugar in a bowl until completely smooth. 
Fill a piping bag with the mix and pipe onto the cooled cakes so it looks like a birds nest.

Decorating

Simply use mini eggs to place on top

It’s all about having fun, don’t worry if your piping and decorating not up to scratch.

The more mess you make the more fun you will all have, happy baking.
