David Broderick new head chef at The Peacock Room

The Peacock Room has appointed David Broderick to lead the two AA rosette restaurant.
Former head chef Rob Walker has been promoted to executive chef of the Deckers Hospitality Group, which owns The Peacock Room.
David Broderick explained his goal is not to change the menus, but to build on the solid foundations he has inherited. He said: “I'm currently looking to introduce some new dishes to the menu.
"I enjoy working with top quality, seasonal ingredients, cooking them in a very simple style, letting the ingredients speak for themselves on the plate.
“I like to take inspiration from different dishes, putting elements together which I think work in an interesting way.
"I always have a notepad handy for jotting down new ideas.
"I like the current menu, and look forward to enhancing it with some of my own dishes.”
Rob Walker said: “We’re extremely happy to welcome David to the team and looking forward to what he brings to The Peacock Room.”
Mr Broderick trained at the Old Rectory in Stockport where he started as a pot washer. He said: “One night, one of the chefs didn't turn up for his shift, so they asked me to work with the kitchen team and that was it, I was off.”
After college, he joined the Hilton Group working alongside acclaimed chef Dave Gale. “Dave was the biggest influence on my culinary career to date. His style is very simple and his food exquisite. I learnt a lot from being in his kitchen,” he added.
When asked about his own food tastes, he listed Tom Kitchin as his inspiration after visiting his Michelin-starred Edinburgh restaurant. He said: “The Kitchin is definitively the best restaurant I've had the opportunity to dine in. However I’m hoping to visit The French in Manchester, when I get the chance.”
The Peacock Room is based at Crimble Hall, which is set in the beautiful countryside on the outskirts of Rochdale. Also based at Crimble Hall is the Conservatory Restaurant and Grill, Fenton’s Bar and The Secret Garden, which just opened for the season on Easter Monday.
The Peacock Room provides dining in a beautiful art deco setting. This fine dining establishment has also achieved a Michelin Knife and Fork award.
The Deckers Hospitality Group owns and runs a number of hotels and restaurants including Crimble Hall, The Royal Toby hotel and Cenetta in Rochdale and Pennine Manor Hotel in Huddersfield.
